
Smoked Salmon Devilled Eggs

Hard‑boiled eggs (halved)

Mayonnaise

Dijon mustard

Native Hebridean smoked salmon (small strips)

Fresh dill

Lemon wedges

Black pepper
INSTRUCTIONS
STEP 1 - Prepare the eggs
Slice the hard‑boiled eggs in half and gently remove the yolks into a bowl.
STEP 2 - Make the filling
Mash the yolks with mayonnaise, Dijon mustard, a squeeze of lemon, salt, and black pepper until smooth.
STEP 3 - Fill the egg whites
Spoon or pipe the creamy yolk mixture back into each egg white half.
STEP 4 - Add the salmon
Top each devilled egg with a small rolled or folded piece of smoked salmon.
STEP 5 - Garnish and serve
Finish with a sprig of fresh dill and a crack of black pepper. Serve chilled with lemon wedges.
